600g chicken breast fillets
1/2 cup unsalted butter, softened
1 tablespoon chopped fresh thyme
3 cups diced tomatoes (peeled and seeded)
1/2 cup grated onion
1/2 cup black beer
1 mango, diced
1/2 cup cream cheese
1 cup chopped escarole
Salt and pepper to taste

Season the chicken breasts with salt and pepper, then coat with butter
Add thyme, tomatoes, and onion, and cook for 5 minutes
Add black beer and let it reduce
Add mango and cook for another 5 minutes
Mix in cream cheese and stir constantly
Remove from heat, add escarole, and serve immediately.
