Remove the skin and cartilage from the chicken breasts with a sharp knife
Dust the meat on both sides with 2 tablespoons of butter
Push it aside
Add the mushrooms and remaining butter, cook for 2 to 3 minutes
Add the onion, tomato sauce, water, salt, black pepper, rosemary, and orange peel
Reduce heat, cover, and cook for 30 minutes or until the chicken is tender
Place in a serving dish and drizzle with the sauce, removing the orange peel
