One-third cup of olive oil
Two medium-sized chicken breasts cut into pieces
One tablespoon of oregano
One teaspoon of salt
To taste pepper
One can of mushrooms sliced
Four tablespoons of grated Parmesan cheese

Preheat a baking dish with aluminum foil
Pour the olive oil onto the prepared baking dish
Place it in a hot oven to warm for 10 minutes
Remove the baking dish from the oven
Arrange the chicken pieces, skin side up, on the warmed olive oil
Sprinkle half of the oregano and salt over the chicken
Add some pepper
Put it back in the oven and bake for 30 minutes
Flip the chicken; sprinkle with the remaining oregano, salt, and a pinch of pepper
Bake for an additional 15 minutes
Remove the mushrooms and liquid from the can and place them on top
Sprinkle with Parmesan cheese and bake for another 5 minutes (or until the chicken is tender)
Serve 8 portions.
