Sauté the onion in butter or margarine lightly
Add the flour, salt, and pepper; mix well
Cook until the mixture starts to bubble; then add the milk and continue cooking while stirring constantly for 1 minute
Let it cool down
Beat the egg whites until stiff
Then beat the yolks well
Add the yolk mixture to the egg whites slowly while whisking constantly, adding the grated cheese and mixing carefully
Pour into a round, greased dish with a 12-inch diameter, and bake at low temperature (150°F) for 30 minutes
Sprinkle with cheese and bake for an additional 5 minutes; then serve in 4 to 6 portions.
