1 chicken, or large turkey (2 kg), cut into pieces
1 tablespoon of salt
1/2 teaspoon of black pepper
1/2 cup of butter
6 tablespoons of all-purpose flour
2 medium onions, chopped (1 cup)
1 crushed garlic clove
4-5 liters of water
250g of fresh shrimp, peeled and deveined
2 cups of okra cut into pieces
1/2 cup of chopped parsley
1/2 cup of grated cheddar cheese

Baste the chicken with salt and pepper
Melt the butter and fry the chicken pieces until they brown
Remove the chicken from the pan and place it in a deep pot
Add the flour to the butter that remains in the pan and let it lightly brown
Add the onion, garlic, and cook for a bit
Add this mixture to the chicken with 1 liter of water and simmer for 1 hour
Add the okra and shrimp and another 3 liters of water
Simmer for an additional 20 minutes
Add the remaining ingredients, simmer for an additional 15 minutes, and serve over rice
