4 cups of cooked and mashed sweet potatoes (680 g)
2 eggs
1 cup of all-purpose flour (180 g)
salt and black pepper to taste
3/4 cup of ground beef or chicken, or prosciutto (100 g), finely chopped
2 tablespoons of finely chopped onion
2 tablespoons of melted butter or margarine
salt and black pepper to taste

Beat the eggs
Add the sweet potatoes, flour, salt, and black pepper to taste
Divide the mixture into 22 portions and shape each one onto a lightly floured surface
Mix in the ground beef or chicken, or prosciutto with the onion, melted butter or margarine, and season to taste
Place 1 tablespoon of the mixture in the center of each portion and close the ends tightly
Fry in hot oil until golden brown
Drain on paper towels
Make 22 units
Store in the refrigerator for up to 3 days and reheat when ready to serve
