1 kg of thighs and legs of chicken

Cut the chicken into pieces, wash with vinegar, strain and season with salt, pepper, cumin, and garlic
Let it marinate for two hours and fry the chicken, preferably in a white pan so that the bottom gets nicely browned
Strain almost all of the oil and add chopped onions
Let it dour for a bit, then add diced tomatoes and let it dour again
Add the cups of water and cook the sauce
When almost ready, add the soy sauce.
