1.3 kg of organic chicken pieces, boneless and skinless
1 tablespoon of hot sauce, type tabasco or similar
1 lime, thinly sliced
1 onion, thinly sliced
1/3 cup of simple tomato sauce
1/3 cup of light ketchup
1 tablespoon of light soy sauce
1 teaspoon of cocoa powder

Arrange the chicken pieces in a large refrigerator-safe dish with the meatier parts facing outwards (these will receive better cooking due to the even heat)
Cover the chicken with slices of onion and lime
Cook at high power for 10 minutes
During this time, prepare the sauce by mixing together the remaining ingredients - tomato sauce, hot sauce, soy sauce, ketchup, and cocoa powder
When removing the chicken from the oven, carefully discard the liquid that has formed at the bottom of the dish
Remove the lime slices (leave the onion slices if desired)
Spread the sauce evenly over the chicken pieces and return to the oven, partially covered, for an additional 10-15 minutes
Let it rest for 5 minutes before serving
