Season the chicken with salt and finely chopped onion
Pulse the pineapple, add it to a pot with water, non-caloric seasoning packets, and spices
Let it simmer until cooked through and tender
Sear the chicken fillets in a hot skillet
Remove the chicken, pulse the pineapple chunks in the same skillet with soy sauce, and spoon over the chicken
Let it cook for 5 minutes
To freeze: cool the chicken completely before packaging and freezing
To defrost: bake in the oven and garnish with fresh cilantro leaves
