4 fillets of your preferred fish
to taste salt
1 tablespoon freshly squeezed lime juice
6 tablespoons olive oil
1 chopped onion
2 diced tomatoes, seeds removed
2 tablespoons chopped fresh coriander
4 lightly beaten eggs
1 tablespoon milk

Season the fish with salt and lime juice
Heat 2 tablespoons of olive oil in a skillet, add the onion, tomatoes, coriander, and fish fillets
Cook for about 10 minutes, covered, over medium heat
Remove from heat
Separate the fish into smaller pieces, remove any bones, place in a bowl and mix with seasonings
Add the eggs mixed with milk to the bowl
All of this will go into an omelette pan where the remaining oil is being heated
Fry the mixture in the omelette pan, covered, until it's firm and golden brown on the bottom.
