juice of 1/2 lemon

Arrange the grated carrots on a sheet of aluminum foil
Place the seasoned lingcod fillets over the carrots
Sprinkle with paprika and beet
Fold the foil, seal the edges, and bake in a hot oven for 20-30 minutes
Yields 5 servings
To freeze: cool, roll up, and freeze on the prepared aluminum foil wrapped in plastic bag
To thaw: remove from plastic bag and reheat in the oven
To enhance: garnish with fresh beet at serving time
