1/2 kg of cod

1/4 cup of pitted green olives

Soak the cod overnight, changing the water occasionally
Rinse and flake the cod
Make a roux with the olive oil, tomatoes, onion, coriander, parsley, cod, potatoes (cut into small cubes), and green olives
Cover the pan, reduce heat
When everything is cooked and the sauce is thickened, add the coconut milk and stir
Turn off the heat
In a greased baking dish, place the cod roux
Beat the eggs and pour over the top, sprinkling grated cheese last
Put in the oven to brown
Serve 4 portions.
