8 tablespoons of oil
12 small onions (375 g) sliced
10 cloves of garlic, thinly sliced
8 sausages (600 g) sliced into 2 cm pieces
4 small eggplants (750 g) sliced
8 small zucchinis (1 kg) sliced into 2cm pieces
12 small tomatoes (750 g) sliced
to taste with salt and black pepper

Heat the oil in a large frying pan and add the onion
Cook until golden brown, then add the garlic and cook for an additional 2 minutes over low heat
Movethe onion and garlic to one side and add the sausage pieces to the pan
Cook until lightly browned, then add the eggplant and zucchini, season with salt and black pepper, and mix well
Cover the pan and cook for 10-15 minutes
Add the tomato and continue cooking, covered, for an additional 10 minutes
Serve hot with slices of white or black bread
