1 roasted turkey carcass
3 liters of water
2 chopped scallions
200g of broken macaroni (fusilli, tagliatelle)
2 cups of cooked and drained beans
to taste salt and black pepper

Place the turkey carcass in a pot and add the water
Ferment for 30 minutes
Strain through a fine-mesh sieve
Bring the pot to a boil again with the scallions
When boiling, add the macaroni and cook until al dente
Add the beans, mix well, and let it simmer
Season with salt and black pepper to taste
Serve hot, topped with grated cheese
Serves 5-6 people.
