Season the shrimp with salt and lime juice
Chop the onion and tomato
Sauté the two with olive oil and garlic
Add the shrimp and sauté for a bit more
Gradually add coconut milk and stir
Add pine nuts. Reserve
Beat the eggs
Grease a baking dish with olive oil and add the shrimp
Add the onion, tomato, and olives
On top, place the beaten eggs
Bake in a medium oven for 10-15 minutes.
