200g mortadela, cut into 1cm cubes
5 eggs
1/2 teaspoon salt
1/4 teaspoon chopped parsley (20g)
3 tablespoons grated Parmesan cheese (for dusting)

In a 29cm diameter frying pan
Combine oil, onion, and mortadela
Cook over medium heat, stirring occasionally with a wooden spoon until the onion starts to brown (about 10 minutes)
Meanwhile, in a medium bowl
Beat eggs lightly with salt and chopped parsley using an electric mixer or whisk
Pour into the frying pan and mix quickly with the cooked mortadela mixture
Stop mixing and cook until firm (approximately 3 minutes)
Transfer to a plate and flip over the frying pan
Cook the other side until golden brown (about 2 minutes)
Transfer to a serving dish, dust with Parmesan cheese, and serve
