Remove excess fat from the pork ribs and cut them into portions
Season with salt, black pepper, and minced garlic to taste
Dust the pork ribs with cornmeal and place them in a large baking dish
Arrange the potatoes over the pork ribs and sprinkle with thyme
Cover with aluminum foil and bake at 400°F (200°C) for about 30 minutes
Remove the foil and continue baking for an additional 15 minutes or until the meat is tender and golden brown
