In a 10-inch frying pan, fry the onion in oil over low heat for 4 minutes
Add the rice, vegetables, and salt to taste
Mix well
Add lightly beaten eggs
Cover the pan and cook over low heat until the eggs are set
Do not overcook
The frittata should be slightly firm
Serve sprinkled with Parmesan cheese
Serves 4-5 people.
