1/2 kg of black plums, pitted and cut into 4 pieces
2 egg whites
2/3 cup milk
1 tablespoon unsalted butter or margarine, melted
1 tablespoon orange liqueur or peach syrup
1 cup all-purpose flour
1 pinch salt
2 egg whites beaten to stiff peaks
Hot oil for frying
1/4 cup confectioners' sugar, sifted

1/4 cup confectioners' sugar, sifted
In a bowl, beat the egg whites until frothy
Add the milk, butter or margarine, and liqueur; mix well
Add the flour and salt; mix until smooth
Add the black plums and beaten egg whites; fold gently
Drip spoonfuls of the mixture into hot oil
Fry some at a time until golden brown
Drain on paper towels and dust with confectioners' sugar
Serving warm, 30-40 fritters.
