Beat the butter, sugar, and salt together
Add the lemon juice and zest
Add one egg at a time, mixing well after each addition
Gradually add the flour to form a firm dough
Leave the dough in the refrigerator overnight
Shape the dough into finger-sized rolls
Fry them in plenty of oil until golden brown
Serve cold
Good for 4 to 5 days.
