6 cups of natural yogurt (200 g each cup)
1 cup of granulated sugar (180 g)

In a small refrigerator-safe bowl, sprinkle the gelatin over the water and let it hydrate for 5 minutes
Bring to a boil in a hot water bath and stir until dissolved
In a large bowl, combine the natural yogurt, granulated sugar, vanilla extract, and dissolved gelatin to obtain a smooth mixture
Cover with plastic wrap and place in the freezer for at least 6 hours or overnight
Just before serving, remove from the freezer and process in a blender
Place back in the bowl, cover with plastic wrap, and return to the freezer for about 15 minutes to gel slightly (do not let it freeze again)
Serve immediately
