In a saucepan, cook the red wine slowly until it reduces to half its volume, almost completely evaporating the alcohol
Add water, essence, and vanilla, allowing it to boil again
Let it cool and refrigerate
Peel and cut the fruits over a bowl to avoid wasting juice
Let them sit in their own juice in the refrigerator for 1 hour
To serve, arrange the fruits on chilled plates, pour some of the wine on top, and garnish with parsley leaves
