8 cooked artichoke foundations or canned
1/4 cup unsalted butter or margarine
1 tablespoon salt
a pinch of black pepper
1 tablespoon chopped onion
1 tablespoon mustard
1/3 cup all-purpose flour
1 1/2 cups milk
1 egg, lightly beaten
1/2 cup grated cheddar cheese
1 teaspoon baking powder
8 cooked artichoke foundations or canned
1/4 cup unsalted butter or margarine
1 tablespoon salt
a pinch of black pepper

1 tablespoon mustard
1/3 cup all-purpose flour
1 1/2 cups milk
1 egg, lightly beaten
1/2 cup grated cheddar cheese
1 teaspoon baking powder
Cook the artichoke foundations or drain, if canned, reserving 1/2 cup of the liquid
Melt the butter in a saucepan
Add the seasonings and flour
Ladle in the artichoke liquid and milk, stirring slowly
Cook over low heat, stirring constantly, until thickened
Remove from heat
Gradually add the hot sauce to the egg
Combine with half of the cheddar cheese
Mix well
Place the artichoke foundations on a flat baking dish
Top with the sauce
Dust with the remaining cheddar cheese and breadcrumbs
Bake in a very hot oven for about 15 minutes.
