Place a green papaya with a pinch of salt in a cloth bag and wash it well under running water to remove any bitterness
Express the liquid thoroughly
In a large pot, combine the sugar cane pieces and water and bring to a boil, stirring occasionally until dissolved
Add the grated papaya, lime peels, and simmer over low heat, stirring occasionally until the mixture thickens and can be scooped with a spoon
Serve in 12 portions.
