Ingredients:
1 whole roast chicken
Lemon juice from 1 lemon
3 cloves of garlic, minced
Salt to taste
1 whole lemon, peeled and segmented
2 tablespoons olive oil
1/4 cup orange juice
2 tablespoons butter
1 medium onion, chopped
1 cup dried cranberries
1 tablespoon thyme, chopped

Season the roast chicken with lemon juice, garlic, and salt
Let it marinate for 30 minutes
Leave the chicken to marinate for 30 minutes
Make several holes in the lemon with a sharp knife and place it inside the cavity of the chicken

Preheat the oven to medium temperature
Brush the roast chicken with olive oil and bake for 20 minutes
Brush the chicken with orange juice and bake for an additional 10 minutes or until the meat is tender

Heat a skillet, melt butter, add chopped onion and dried cranberries, and cook for 5 minutes
Add thyme and simmer for 5 minutes
After roasting, remove the lemon from the chicken and transfer it to a serving platter with the cranberries.
