Dough
1 1/2 cups all-purpose flour
Salt to taste
1/2 cup grated Parmesan cheese
1/2 cup unsalted butter, softened
3 tablespoons ice-cold water
Filling
2 tablespoons olive oil
2 cloves garlic, minced
1 chopped tomato
1 bunch fresh spinach, chopped
1 cup grated ricotta cheese
50g chopped ham
1 egg, beaten
Dough

In a bowl, combine the flour, salt, and Parmesan cheese

Add the water and work the dough until it is smooth and even
Wrap the dough and refrigerate for 15 minutes
Filling

Heat the olive oil, sauté the garlic, add the tomato and spinach
Let it cook for 10 minutes over low heat
Drain excess liquid, let it cool, and mix in the ricotta cheese and ham

Preheat the oven to 400°F
Roll out the dough and line a 18cm diameter tart pan with it
Place the filling, leaving a 5cm border
Fold the border over the filling
Brush with egg and bake for 45 minutes or until golden brown.
