1 hen pieces
1 tomato
1 onion
1 bell pepper
1 bunch of parsley
2 cups of rice
2 cloves of garlic
1 tablespoon of vegetable oil
Salt and black pepper to taste
1/4 cup of cassava flour
1 tablespoon of tomato extract
2 cups of broth in which the hen was cooked

Prepare the hens
Sauté the onion and garlic in hot oil
Add the chopped tomato, bell pepper, salt, black pepper, and tomato extract
Cook for a few minutes
Then add the hen pieces and enough water to cook for 1 hour
Once the hen is cooked, add the rice and parsley
Cook for a few more minutes until the rice is done
Serve with mashed potatoes
Prepare the mashed potatoes
Remove 2 cups of broth from the cooked hen
Put it in a pot and heat it up
Add a handful of cassava flour gradually until it reaches the desired consistency
Stir constantly.
