Clean the chicken pieces and sprinkle a little coarse salt inside
Cover them with bacon slices to prevent drying out during frying
Heat butter, oil, chopped onion, and parsley in a cast-iron pan
When the onion is golden brown, add the chicken pieces
During frying, mist with white wine to give it a pronounced flavor
Fry until the chicken is cooked and golden brown
Serve with fried polenta and white rice
Divide into 3 portions.
