2 large, ripe tomatoes
1 medium cucumber
1 large bell pepper
1/4 cup of bitter melon (leaves and tough stems)
1 medium onion
1 clove of garlic
4 sprigs of parsley
1 tablespoon of dried thyme
1 tablespoon of olive oil
3 tablespoons of freshly squeezed lime juice
1 teaspoon of salt
1 liter of frozen tomato puree
for garnish

Remove the tomatoes' skins and cut them into 4 pieces
Remove the cucumber's seeds and cut it into 4 pieces
Cut the green bell pepper into 4 pieces, removing seeds and white parts
Place a chef's knife in the food processor
Turn on the processor and add all ingredients except for the tomato puree, adding them gradually
Process until all legumes are finely chopped
With the motor still running, add the tomato puree
Turn off and pour into a bowl to chill in the refrigerator
Garnish with bitter melon
