1 tablespoon unflavored gelatin

1/2 cup honey
2 cups ripe mashed avocado
2 to 3 tablespoons lemon juice

3 small cups natural yogurt (600g)

Sprinkle the gelatin over the orange juice
Let it sit for a few minutes and then add the honey
Heat it gently until well dissolved
Place it in a blender and add the remaining ingredients (except toasted coconut flakes)
Blend until smooth and creamy
Refrigerate until partially frozen
While that's happening, prepare a bowl in the refrigerator
Add the yogurt mixture to the bowl and blend until creamy but not fully frozen
Refrigerate again until firm but not too hard
Serve the Pudding garnished with toasted coconut flakes
Let it set for 10 minutes.
