1 1/2 cup of sugar
2 cups of pineapple chunks
1 1/2 tablespoon of unflavored gelatin
1 1/2 cup of heavy cream

Mix the sugar with 1/2 cup of water
Cook over medium heat until caramelized
Add the pineapple and cook for about 4 minutes
Remove from heat and add the dissolved gelatin in 1/3 cup of boiling water
Mix well
Add the heavy cream and mix delicately
Pour into a 22 cm diameter mold with a hole in the center, moistened with water
Refrigerate until set
Unmold and serve in 12 pieces.
