1/3 cup unsalted dry coconut flakes
1/2 cup brown sugar
1/4 cup rum
2 tablespoons butter or margarine
1 teaspoon ground cinnamon
3 ripe bananas, sliced
4 large scoops of banana cream pudding

Toast the coconut flakes in a skillet, stirring constantly until golden brown
Remove from heat
In the same skillet, combine the butter, sugar, cinnamon, and rum
Cook over medium heat until the mixture starts to bubble
Add the sliced bananas and cook until they release their juices and the sauce thickens slightly
Be careful not to mash the fruit
Place a scoop of banana cream pudding in each dessert dish
Arrange the banana slices around it and drizzle with some of the sauce
Finally, sprinkle with toasted coconut flakes before serving
