Mix the beet with the onion, vinegar, and sugar. Reserve
Dissolve the gelatin in a little hot broth
Mix with the remaining broth
Chill until it thickens slightly
Mix the chopped beet with the gelatin
Pour into an oiled 19 cm diameter ring mold
Chill until firm
Unmold
Decorate with mayonnaise and cucumber
Serves 4 to 6 people
