Place the gelatin mixture in a cup of boiling water for 5 minutes
Squeeze and dissolve in a cup of boiling water
Combine the pineapple, remaining water, and pineapple puree, and mix well
Simmer on low heat for 8 minutes
Add the food coloring (if using)
Let it cool and refrigerate
Cut into pieces, roll them in granulated sugar, and serve.
