Soak the gelatin in cold water
Add boiling water, stirring constantly until the gelatin is fully dissolved
Add papaya juice and sugar, stir well
Let it cool
Add the diced papaya and refrigerate until slightly firm
Beat the egg white until frothy
Combine the sugar and beat until stiff peaks form
Beat the heavy cream until stiff
Add the meringue to the gelatin mixture, stirring carefully
Pour into 6 individual cups or a mold with a capacity of 1 1/2 liters
Refrigerate until firm
Serve in 6 portions.
