2 packets of lemon gelatin
1 3/4 cups boiling water
6 tablespoons freshly squeezed lemon juice
4 tablespoons water
1 large cucumber
250g ricotta cheese, sifted
4 tablespoons mayonnaise
1 1/2 cups cured ham, diced
3/4 cup chicken broth
3 tablespoons chopped green onion
1 tablespoon grated lemon zest
2 packets of lemon gelatin
1 3/4 cups boiling water
6 tablespoons freshly squeezed lemon juice
4 tablespoons water
1 large cucumber
250g ricotta cheese, sifted
4 tablespoons mayonnaise
1 1/2 cups cured ham, diced
3/4 cup chicken broth
3 tablespoons chopped green onion
1 tablespoon grated lemon zest
Dissolve the gelatin in boiling water
Add freshly squeezed lemon juice
Mix 3/4 cup of this gelatin with 4 tablespoons of water and pour into a ring mold that holds 6 cups of liquid
Chill until almost firm (if it becomes too firm, the top layer won't stick to it)
While that's chilling, peel the cucumber, cut it in half, and remove the seeds
Grate the cucumber finely and let it drain
Mix in 1/2 cup of grated cucumber
Combine the ricotta cheese, mayonnaise, cucumber, ham, and chicken broth
Add chopped green onion and grated lemon zest
Mix well, chill until slightly thickened
Pour into the chilled gelatin mold
Chill until firm
Unmold onto lettuce leaves and serve 12 pieces.
