3 tablespoons unflavored gelatin
1/2 cup cold water
2 cups heavy cream
1/2 cup hot water
1 tablespoon grated orange zest
juice of 1 orange
2 tablespoons freshly squeezed lime juice
green or red food coloring for food use

Soak the gelatin in cold water
Whisk together the heavy cream, hot water, and bring to a simmer
Add the gelatin and let it cook slowly for 20 minutes
Stir in the grated orange zest, orange juice, lime juice, and desired food coloring
Chill until set
Let it chill in the refrigerator until it thickens slightly and cools
Fill into egg molds
Let it finish setting
Use to garnish approximately 50 deviled eggs
