Wash the strawberries thoroughly and remove the stems
Place the strawberries alternating with the sugar in a saucepan
Let it rest overnight
Bring to a boil rapidly for 10-12 minutes until the fruit becomes transparent
Seal and let it rest another night
Pour into special gelato containers, sterilized and warm
Close tightly.
