Wash the strawberries and remove any stems thoroughly
In a saucepan or copper pan, place the fruit and cover with sugar
Cook over low heat, stirring constantly, until the strawberries become soft
Cook over medium heat, stirring occasionally, for 45 minutes, or until the mixture thickens
Remove the foam that forms with a skimmer
Transfer to a sterilized glass jar, seal and store in the refrigerator
