2 large red mangos
Ginger ice cream
1 1/4 cups milk
1/2 cup heavy cream
25g of fresh ginger, grated (measured in spoons)
5 eggs
1/4 cup sugar
Chocolate sauce
1/2 cup water
200g semi-sweet chocolate
2 tablespoons rum or more, to taste

200g semi-sweet chocolate
2 tablespoons rum or more, to taste
Pit the mangos
Remove the pit and cut into slices not too thin
For the ice cream, warm the milk, heavy cream, and grated ginger in a saucepan
Let it simmer
Beat the eggs with sugar
Pour the hot milk mixture over the top and mix quickly
Warm it slowly and mix until it thickens slightly without boiling
Strain through a sieve
Let it cool
Chill in the refrigerator
When partially frozen, beat until creamy
Chill in the refrigerator until firm
For the chocolate sauce, bring the water to a simmer, add broken chocolate pieces
Add rum to taste
Arrange the ice cream on a platter or individual dishes
Cover with the chocolate sauce and surround with mango slices
