1 cup of peeled and sliced ginger
1 cup of sugar
1 cup of peeled and sliced ginger

Boil the ginger in enough water to cover it
Repeat the process two times
In a pot, combine the ginger with 1/2 cup of water and sugar
Cook until the mixture reaches a soft-ball stage
Remove from heat and stir until the mixture becomes foamy
The ginger pieces should be pickled and loose
To achieve the soft-ball stage, slowly add the hot syrup to a cold water bath
If the syrup forms a ball that does not hold its shape, it is ready.
