Mix together flour, yeast, and salt in a bowl
Add nuts, crystallized fruit, and raisins to the dry ingredients
In another bowl, cream butter or margarine until light and fluffy
Add grated orange peel and mix well
Beat in eggs one at a time, making sure each egg is fully incorporated before adding the next
Mix mashed banana with orange juice
Combine creamy mixture of butter and eggs with flour and fruit mixture, alternating between wet and dry ingredients, starting and ending with dry ingredients
Grease and flour a 26x12x7.5 cm English-style banana cake pan
Scoop batter into the prepared pan
Bake in a moderate oven (170°C) until a toothpick inserted in the center comes out clean
Let cool for 30 minutes in the pan before removing.
