Combine the egg whites and sugar in a heatproof bowl and place it over simmering water in a bain-marie
Stir with a wooden spoon until the sugar is fully dissolved
The mixture will be warm
Remove from the heat and whip well with an electric mixer until thickened and cooled
Add the lemon juice and continue whipping until stiff peaks form
