Preheat the oven to 250°C (very hot)
Pit the pineapples, cut them in half and remove the core
Reserve the pineapple halves
Squeeze the pulp through a fine-mesh sieve into a bowl
Transfer it to a small saucepan, add the flour and 2 tablespoons of water, and cook over high heat, stirring occasionally with a wooden spoon, until boiling (approximately 1 minute)
Remove from heat and fill the pineapple halves
Distribute in a serving dish and dust with cinnamon
Carefully pour the remaining water into the serving dish
Bake in the preheated oven until the pineapple is well-cooked (around 15 minutes)
Transfer to six plates and serve immediately
