4 cups of watermelon rind, cubed (760g)
4 tablespoons of lime juice
4 tablespoons of tequila
3 tablespoons of sugar
1 tablespoon of orange liqueur (Cointreau or Grand Marnier)

In a blender, combine all the ingredients to obtain a smooth mixture
Transfer the mixture to a small baking dish, cover with plastic wrap, and freeze until firm (about 3 hours)
Remove from freezer and, with a knife, break up the mixture
Blend in a food processor until smooth
Place back in the baking dish, cover, and return to freezer to firm (about 1 hour and 30 minutes)
Repeat the process
Remove from freezer and scrape rapidly with a spoon
Serve immediately.
