2 1/2 pounds of bacon (500g)
1/4 cup of olive oil
4 cloves of garlic, minced
2 medium onions, chopped (200g)
1/2 teaspoon of black pepper
1/2 teaspoon of cinnamon
1 pound of tomatoes, peeled and seeded, diced
1 pound of linguica, sliced into 0.5 cm thick rounds
6 cups of water
1 tablespoon of salt or to taste

Wash the bacon well and soak it in cold water for 24 hours before use
Drain the bacon, discarding any excess water
In a large pot, heat the olive oil over medium heat
Add the garlic, onion, black pepper, cinnamon, and tomato
Fry, stirring for 2 minutes, or until the onion is translucent
Add the linguica and cook for 3 minutes, or until it starts to change color
Add the bacon and water and simmer until tender
Season with salt
Serve hot.
