500 g of dried beef, desalted

1 chopped green pepper
1 mashed garlic clove
1 tablespoon of paprika
Salt and black pepper to taste
1 tablespoon of chopped cilantro
2 tablespoons of chopped scallions
1 kg of cooked cassava
1/2 cup of milk
1 egg yolk
1 tablespoon of butter
100 g of grated Minas cheese
500 g of dried beef, desalted

Place the beef in a pressure cooker, cover with water and cook over low heat for approximately one hour
Let it cool
Remove all fat and shred the beef
Heat the olive oil and sauté the onion, pepper, and garlic until they're soft
Add the paprika and shredded beef and sauté until the beef is golden brown and crispy
Season with salt and black pepper
Sprinkle with cilantro and scallions. Reserve
Mash the cassava while it's still hot and mix with milk
Beat with a spoon until you get a puree
Add the egg yolk and butter, season with salt and black pepper, and cook over low heat, stirring constantly, for five minutes
In a greased baking dish, spread half of the puree
Make a layer with the beef and then cover with the remaining puree
Sprinkle with cheese and bake in a preheated oven until golden brown.
