Mix well the beef, tomato, thyme, oregano, cumin, black pepper, and salt
Brush a flat surface with olive oil and use a 10cm cookie cutter
Place one quarter of the mixture inside it and press
Repeat the process with the remaining portions
Heat a non-stick pan over high heat
Lightly brush it with olive oil and reduce the heat to medium
Cook the beef patties for 5 minutes on each side or until well browned
Cut the beef in half lengthwise and fill each one with lettuce, a beef patty, and three slices of brie cheese

In a small bowl, mix all the ingredients well
Serve the sandwiches with the sauce on the side.
