12 medium sweet potatoes
2 tablespoons grated cheese
1 tablespoon chopped green chili pepper

1 egg
1 cup whole milk
1 tablespoon all-purpose flour approximately

1 tablespoon butter
1 chopped onion
1 handful of chopped spinach
1/2 cup whole milk
1 tablespoon all-purpose flour

Cook the sweet potatoes well until they're soft
Then, drain and mash them until they form a puree
Combine the remaining ingredients and bring to a simmer until excess liquid evaporates
Filling
Melt the butter and sauté the onion and spinach
Add the milk mixed with all-purpose flour and season with salt
Cook until it starts to thicken
Divide the sweet potato mixture into small portions and place a little of the filling in the center
Roll them into balls and arrange them in a greased baking dish
Brush with egg white and bake in a medium-temperature oven until golden brown
