1/2 kg of cleaned sardines
4 potatoes cut into slices

In a large saucepan, create a layer with potatoes
Spread a bit of onion and add the sardines
Dust with some parsley, salt, and pepper
Drizzle with vinegar and olive oil and repeat the layers until all ingredients are used up
Add thyme to the last layer
Cover the saucepan and cook over low heat
Lift the saucepan off the heat and shake it occasionally to prevent sticking and cooking until the potato is tender
Remove from the heat, drizzle generously with olive oil, and serve.
